Chicken Marsala
Ingredients:
1 package organic pasture raised chicken breasts
8 ounces mushrooms - I use organic baby bella
Extra virgin olive oil and grass fed butter
Salt, pepper, basil, oregano
Fresh chopped garlic
Organic pasture raised chicken bone broth
Marsala wine - best purchased at a wine or liquor store not the one at the grocery store
Cornstarch, flour or arrowroot powder
Instructions:
Prepare chicken by cutting into thin slices or strips
Heat a large skillet and add a teaspoon or 2 of olive oil and about 1 tablespoon of butter
Toss the chicken in a couple of tablespoons of flour, cornstarch or arrowroot powder, coating each piece.
Add the chicken to the pan with the hot oil and butter and season with salt, pepper, basil, oregano. Add the chopped garlic as well.
Cook the chicken til it is brown on the outside and mostly cooked, remove it to a glass baking dish and put in a 300 degree oven to continue cooking and remain hot.
Keep the heat on the skillet and add a couple of tablespoons of the Marsala wine to deglaze the pan, then adding the mushrooms, along with a tablespoon of butter, seasoning them as desired.
Add about a quarter cup of chicken bone broth and some more Marsala wine, cooking til the mushrooms are tender.
Remove the chicken from the oven and add into the pan with the mushrooms, also adding any juice from the chicken to the pan, stir to coat the chicken with the mushrooms and gravy. Allow the chicken to cook with the mushrooms for about 3-5 minutes and serve over pasta, with a side salad and/or green veggies.
