The Best Homemade Burger Buns
Ingredients:
1/4 cup warm organic milk - I use raw milk from a local farm
1-1/3 cups warm water
1 Tablespoon active dry yeast
1-1/2 Tablespoons organic cane sugar
1 large egg
2 teaspoons salt - I suggest sea salt or pink Himalayan salt
4-1/4 cups organic unbleached all purpose flour
1/4 cup melted butter
for egg wash - 1 egg beaten with 1 Tablespoon water
Instructions:
Place warm (for best proofing this should be warm not too hot) water and milk in a large bowl, add the sugar and yeast and let proof about 15 minutes, yeast will get bubbly and puff up
add flour, salt, egg and melted butter and stir with a wooden spoon or spatula to incorporate all ingredients, once it is a shaggy dough consistency, let the dough rest for 5 minutes and then begin to knead by hand, in the bowl or move to a cutting board. Continue kneading until the dough is smooth. This is a soft dough and will still be slightly sticky.
Shape the dough into a tight ball and place in an oiled bowl, cover with a lid, plastic wrap or a damp towel and let rise at room temperature til doubled in size. This may take anywhere from 30-6o minutes. While dough is rising, line 2 baking sheets with parchment
Turn the dough onto a board, gently shape into a log, cut into 12 equal pieces, shaping each of these into a tight ball by tucking the dough under and place on a parchment lined baking sheet, 6 per sheet, cover with another piece of parchment and/or towel and let rise another 30-45 minutes.
Preheat the oven to 425 degrees
Prepare the egg wash by beating the egg with 1 Tablespoon water
Once the buns have at least doubled in size, brush the tops with the egg wash and bake 15 minutes, or until the tops are golden brown.
Buns can be stored at room temperature in an airtight container for about 4 days or in the refrigerator, they can also be easily frozen for several month
