Salted Caramel Cashew Energy Balls
These are a quick, easy and healthy breakfast treat or on the go snack! Made with simple whole food ingredients, no processed food, no refined or added sugars, lots of protein too! I use all organic ingredients for these energy balls to be sure they are as healthy as possible.
Healthy can be simple!!
Ingredients:
1 cup cashews - raw or roasted*.
1 cup pitted dates
1/3 cup shredded unsweetened coconut
1/2 teaspoon vanilla extract
1/2 teaspoon sea salt or pink Himalayan salt
2 Tablespoons hemp seeds or other seeds such as chia - optional
2 Tablespoons cacao nibs
optional add other seeds, cacao powder, cinnamon, extra coconut for rolling
*be sure roasted cashews have no added seed oils!
Instructions:
Add cashews, dates, coconut, vanilla and salt to your food processor, pulse until well chopped and sticky consistency. Add cacao nibs and pulse a few more times. The “dough” should be sticky enough so it sticks together. Roll into balls, using a cookie scoop helps this process.
Optional - roll in cacao powder or coconut.
Store in the refrigerator for up to 7 days or in the freezer for several months.
